We’re back with more honey recipes for you—this time courtesy of our pal Ryan Faull, owner of Cape Town’s beloved Knead Bakery, a Honeybee Heroes supporter from the very beginning, and one of our very first adopted hives!
Ryan and our founder Chris became friends in early 2020, right when Chris was starting up Honeybee Heroes. Ryan has been a wonderful supporter of our work from the very beginning, and Chris considers him one of the organisation’s founding partners. Now, Knead Bakery stocks exclusively Honeybee Heroes honey, which they use to make all of their tasty treats. You can also buy our honey over the counter at their cafés.
If you haven’t already, we highly recommend stopping into their twelve locations around Cape Town and surrounds. But in the meantime, why not try out one of these honey-forward Knead Bakery recipes at home?
Danish feta and creamed honey dip
This feta and honey appetizers pairs great with one of Knead Bakery’s heavenly freshly-baked breads (fresh or toasted) or dipped with cold veggies.
Here’s what you’ll need:
100 grams of a good smooth and soft danish feta
15 to 25 grams of Honeybee Heroes honey
Pinch of black pepper
Drizzle of olive oil
Place the first two ingredients into a bowl and mix with a fork, then crack some fresh black pepper over the top. Place into some wax paper or baking paper and roll it up into a cylinder shape and twist the ends like a big sweet. Leave in the fridge for at least 1 hour to set properly. To serve, unwrap and place on a serving board, and top with a drizzle of olive oil.
Honey mustard dressing
Whip up this easy honey mustard dressing just before dinner, or pre-make a big jar of it and store it in your fridge.
Here’s what you’ll need:
¼ cup Dijon mustard
¼ cup Honeybee Heroes honey
¼ cup cider vinegar or grape vinegar
6 tablespoons of olive oil, olive oil blend, or a vegetable oil
1.5 teaspoons of salt
1 teaspoon black pepper
Thyme to taste
Place all ingredients into a bowl and whisk together (pro tip: you can also use a drinks shaker or blender).
Knead Bakery’s butter chicken
Every South African household needs a good butter chicken recipe. In Knead’s famous butter chicken, Ryan uses honey to add a little sweetness and round out all of the amazing flavours. We bet your dinner guests will be going back for seconds!
Here’s what you’ll need:
Part One:
800 grams of chicken breast, cut into bite-size cubes
120 ml full-cream yoghurt
50 grams fresh ginger, grated
2 cloves garlic, chopped
20 grams fresh coriander, chopped
20 grams Peri Peri or chilli powder
Part Two:
70 grams finely chopped onion
40 ml of olive oil
2 cloves garlic, crushed
20 grams fresh ginger, grated
10 grams turmeric
10 grams ground cumin
10 grams garam masala
50 grams tomato paste
4 bay leaves
2 grams curry leaves
250 ml cream
300 ml water
40 grams Honeybee Heroes honey
Salt and pepper to taste
Part Three:
2 tomatoes, diced, to garnish
20 grams fresh coriander leaves, to garnish
300 ml yoghurt, to garnish
Part 1
Place the chicken, yoghurt, ginger, garlic, chopped coriander and Peri Peri or chili powder in a bowl and mix together. Leave to marinate for 2 hours.
Part 2
Sauté the onion in the olive oil until soft. Add the garlic and ginger and soften slightly. Dry-fry the turmeric, cumin and garam masala in a separate pan. Add the dry spices to the onion mix and cook for a minute. Add the tomato paste and stir in. Add the bay and curry leaves. Add the cream and water and bring to the boil. Simmer until slightly thickened. Stir in the honey and season with salt and pepper. Allow to cool down.
Part 3
Place the marinated chicken, with any leftover marinade, into the source. Bring to a simmer and cook gently until the chicken is tender and cooked through (about 10-15 minutes). Top with tomato, coriander and yoghurt for serving.
